As for our turkey, brined turkeys tend to cook faster than un-brined ones (I've read) so 2-2.5 hours is an estimate for the size bird we got. I wanted to make sure there was time in there to play with (2:15-3:00) in case it needed more time. Of course, we'll be using a thermometer to check it. Whoops. I probably still will roll out the truffle filling... actually I probaly won't. I did have great an glorious plans though to do everything I could today. Luckily I'm only taking a couple of sides and dessert (well two) and an appetizer, so easy peasy. :-) Hey, are you sure you're not taking the turkey out too early?
