Easy fajitas (cooking in a mostly-empty house)

We made these fajitas when we still only had one pot and one pan, and the movers still hadn’t come with the rest of our goods.

I forgot to take pictures of the veggies cooking, but I’ll tell you about it. First, I cut up 2 onions and 2 green bell peppers, and sauteed them (along with sliced mushrooms) in batches in my little pan. It took a while, because I really like my peppers and onions cooked to death. I added a tiny bit of Worcestershire sauce, some soy sauce, and lots of lime juice while they cooked.

As each batch finished cooking, I put it into our pot over low heat to stay warm. Then I cooked the chicken, also with soy sauce and lime juice.

I warmed the flour tortillas over the steam from the chicken, for a few seconds on each side. Then, our fajitas were ready to assemble!

Just flour tortillas, the chicken, veggies, fat-free sour cream, cheddar cheese, and salsa!
