So this was my AMAZING dinner tonight… so delicious. Who says salads are just summer fare?
So, we marinated and grilled some chicken breasts…
The Guy wanted rice to go with them, so I made wild/long grain rice a roni rice, and added a ton of spinach to it (yum!).
Now, remember all the veggies I cut up before? Not only does it make them easy to grab as a snack throughout the day, but it also make it easy to add them to meals without any more prep.
I made myself a salad with broccoli, raw bell peppers, and a hard boiled egg (I also boil them in batches so they’re ready for snacking, usually dipped in balsamic vinegar and salt). I cut up half a chicken breast and sprinkled chunks on my salad… and topped everything with homemade low fat ranch dressing. I had a little bit of rice too… looks like more than it was, because it’s on top of lettuce and kind of spread out. It was gooood.
Now, I know I’ve said this before… but I think the low fat Ranch dressing you can buy in the store tastes really odd…funky, like it’s sour or something. It’s gross. And watery. So I make my own. Same way I make my low-fat Ranch DIP, but with milk added.
Low Fat Ranch Dip:
- big lump of fat-free sour cream
- small lump of lite mayonnaise
- sprinkling of Ranch seasonings (the dry mix) until it tastes good
Low Fat Ranch Dressing:
- Couple spoonfuls Low Fat Ranch Dip
- small splash of milk
- Whisk

That looks yummy. Very healthy. It reminds me of the Chicken Salad at Logans (the place with all the peanuts). Do you have one in MS?
