Made-From-Scratch Turkey Noodle/Dumpling Soup (With Leftover Thanksgiving Turkey)

This is just what I needed to treat my post-craft-show cold. Made-from-scratch turkey noodle soup, just like grandma would make if she were into making stuff like this.

Remember the turkey stock I made and froze? Well I started with that. I dumped in a 3-cup frozen block of stock, along with 3 cups of water, then set it to thaw and heat on the stove.

Meanwhile, I realized I didn’t have any egg noodles. So I read some noodle/dumpling recipes online and settled for this mix of them because it is relatively simple.

Beat an egg.

Add a cup of flour.

And some salt…

Then add a splash of milk if it seems too crumbly. Roll it out…

And cut it into strips.

My dumpling thingies sat around while I washed, peeled, and chopped my veggies. I used a stalk of celery, one potato, and 2 carrots.

The stock had melted and everything was warm by this point, so I dumped in the veggies first.

Then dropped in the dumpling things one by one …

And covered it, turned the heat to medium-low, and let it simmer/steam for about 10 minutes.

Meanwhile, I cut up some leftover Turkey from Thanksgiving (It was in the freezer! Not getting moldy in the fridge, don’t worry.)  I didn’t wantit to get all dry and overcooked so I waited until the veggies and dumplings were finished cooking before adding the turkey.

Once I dumped in the meat, I let it heat up before serving.

Mmm…the anticipation!

Delicious!

Like I said, it definitely hit the spot in my winter-cold condition… and reminded me of the dreams I used to have when I was little of the old grandmotherly lady who lived in a house on stilts and would invite all the neighborhood children in for cookies*. Except that it’s soup, not cookies.

*I think this dream grandmotherly lady was inspired by Mrs. Piggle Wiggle.

    My Grandaddy grew up in Arkansas and insisted that my “Northern” Grandmother learn these dumplings. Turkey soup with “southern dumplings” are my Dad’s favorite meal.
    Mmmm…Now I think I need to make some.

    Ahhh, so simple, yet so delicious. I, too, made turkey leftover soup, only with whole wheat rotini (do not recommend, ok, but not so good) and with a bunch of Bell’s seasoning in it. Yummy.
