How to make Fluffy Pancakes – Recipe – (and Chocolate Chip Pancakes!)

Every Sunday, my dad used to make a yummy homemade breakfast for all of us, and we’d gather in the kitchen for some nice family time. It was awesome, and man… that guy can make some breakfast! Sometimes it was waffles or french toast, but probably the most frequent (and my favorite) was chocolate chip pancakes (with lil’ smokies breakfast sausages…mmm). This isn’t his recipe, but it’s durned good.



First, dump 3 cups of flour into a bowl.

And add 6 Tablespoons of sugar.

Then throw in 1/4 teaspoon of salt and 2 Tablespoons of baking powder.

Mix mix mix.

In a measuring cup, mix 1 cup of milk and 1/3 cup canola oil (or other veggie oil). Beat in 3 eggs, then combine with the dry ingredients.

You can pour slowly and dramatically if you want.

Stir it up and decide if it’s battery enough (haha battery) for you. It wasn’t.

Add milk until it’s the right texture for you. Some people like thicker pancakes and other people like thinner ones, but this is a pretty good middle…

Once your pan is heated over medium heat, spoon in some pancakes.

And when they get nice and puffy and have bubbles rising to the top like this…

It’s time to flip them!

I made a couple sets of plain ones for hubs, who likes to drizzle syrup on his.

Well… is this still called drizzling?

Eh, I think it’s more like glopping. He likes to glop the syrup on his!

I don’t like anything on mine, unless it’s that spray whipped cream from a can like my dad used to do for us sometimes. But I like mine with CHOCOLATE CHIPS IN THEM.

I’ve found that if I mix the chips into the batter, they all sink to the bottom, and I get weird varying amounts of chips in each pancake, so I just sprinkle them on after spooning the batter into the pan.

Here’s the recipe, in case you don’t want to print out the whole thing.

Puffy pancakes

Ingredients:

  • 3 cups flour
  • 6 Tablespoons sugar
  • 1/4 tsp. salt
  • 2 Tablespoons baking powder
  • 3 eggs
  • 1/3 cup canola oil
  • 1+ cup milk


Mix the dry ingredients. Mix the wet ingredients. Combine wet and dry ingredients. Add milk if needed. Cook in a pan over medium heat  (or on a griddle if you’re fancy like that). Enjoy!

    Hi there,

    Thanks for your recipe! I’m a pretty inexperienced cook and was trying out for a small batch to see how it works so I did 1/3 of everything you mentioned. But my pancakes turned out rather weird tasting (somewhat bitter and soapy). Texture is fine though! Any advice?

      The only thing I can think of is your baking powder. Did you forget to decrease the amount? Or did you maybe use baking soda instead?

    OMG YUMMY az thnkq soo much 4dat 2u n ur dad they were very njoy my kids n mokos jus chowd dem dwn n i was lucky 2gt 1, so when they all lft th table wif happy tummies I had 2make up anather batch & what I also did s made 1half of plain n other half threw n chokchpyz, big mistake kids n mokos came back so stl yt 2try th chippy1, to b continued!! ;-) :-(

    I have never been able to make a good fluffy pancake. They have always been to heavy. This recipe is wonderful! I used Ener-G Egg Replacer for the eggs and soy milk instead of cow’s milk due to DD’s dairy and egg allergy. The pancakes were light and fluffy. DD loved them at breakfast then had the leftovers for lunch. Thanks for sharing this terrific recipe. Love the pictures too.

    Amazing pancakes! No more bisquick for me! Thanks for the recipe. It was very easy. The pancakes turned out so fluffy. I added a teaspoon of vanilla. Also, I didn’t have enough oil so I added some “I can’t believe it’s not butter” vegatable oil spread. It was a lot of batter but that’s a plus to a mother of two little ones because now I can make pancakes this week without any effort. Only problem is… They are so wonderful it’s going to be hard for me not to eat pancakes every day. I already ate them for breakfast and dinner yesterday. I love pancakes but they are not part of my clean diet. I guess I better get on the elliptical.

      Just made these again today. This time I used 1/3 oil and no butter. I have to say they were good but not as good as when I used butter. Last time I ran out of oil so I used butter and those turned out amazing.

    For the chocolate chips version, I put some chocolate chips into a measuring cup (like 1/3 cup size) then scoop battery into, mix it up a little and pour into the skillet. The advantage is that all chips are coated – never hit the heat, which makes them soft and gooey rather than “fried”.

    I am really astounded by these pancakes and are the best ones I have found online but I have yet to try out the recipe with chocolate chips and without a doubt I know they’ll be delicious. And this proves that anyone can cook because I am actually 12 years old and I make them for my family all the time and they can’t get enough!

    Thanks for the recipe! I needed to add about 3/4 to 1 cup more of milk than the recipe called for (just eyeballed it), to make the batter less doughy and more battery. I also added a tsp. Vanilla to the wet ingredients. These pancakes turned out fluffy and perfect. Thanks again!
