Every Sunday, my dad used to make a yummy homemade breakfast for all of us, and we’d gather in the kitchen for some nice family time. It was awesome, and man… that guy can make some breakfast! Sometimes it was waffles or french toast, but probably the most frequent (and my favorite) was chocolate chip pancakes (with lil’ smokies breakfast sausages…mmm). This isn’t his recipe, but it’s durned good.

First, dump 3 cups of flour into a bowl.
And add 6 Tablespoons of sugar.
Then throw in 1/4 teaspoon of salt and 2 Tablespoons of baking powder.
Mix mix mix.
In a measuring cup, mix 1 cup of milk and 1/3 cup canola oil (or other veggie oil). Beat in 3 eggs, then combine with the dry ingredients.
You can pour slowly and dramatically if you want.
Stir it up and decide if it’s battery enough (haha battery) for you. It wasn’t.
Add milk until it’s the right texture for you. Some people like thicker pancakes and other people like thinner ones, but this is a pretty good middle…
Once your pan is heated over medium heat, spoon in some pancakes.
And when they get nice and puffy and have bubbles rising to the top like this…
It’s time to flip them!
I made a couple sets of plain ones for hubs, who likes to drizzle syrup on his.
Well… is this still called drizzling?
Eh, I think it’s more like glopping. He likes to glop the syrup on his!
I don’t like anything on mine, unless it’s that spray whipped cream from a can like my dad used to do for us sometimes. But I like mine with CHOCOLATE CHIPS IN THEM.
I’ve found that if I mix the chips into the batter, they all sink to the bottom, and I get weird varying amounts of chips in each pancake, so I just sprinkle them on after spooning the batter into the pan.

Puffy pancakes
Ingredients:
- 3 cups flour
- 6 Tablespoons sugar
- 1/4 tsp. salt
- 2 Tablespoons baking powder
- 3 eggs
- 1/3 cup canola oil
- 1+ cup milk
Mix the dry ingredients. Mix the wet ingredients. Combine wet and dry ingredients. Add milk if needed. Cook in a pan over medium heat (or on a griddle if you’re fancy like that). Enjoy!

I know this is an old post, but I stumbled across it and wanted to let you know that you can mix the chips into the batter. My trick is to mix the chips into the dry ingredients so they get coated with flour. Then add wet ingredients. It keeps the chips from sinking to the bottom!
Same trick works for adding blueberries, and for adding anything to cakes, cookies, or muffins.

If you take a little time and separate the eggs, whip the whites, and mix the whites in at the end, THEN you will be griddling some fluffy pancakes. That’s the secret and you’ll never eat ‘em any other way once you try it (chocolate or not).

You are so right! They were very fluffy! Landon loved them… I did tweak the recipe a little bit: using whole wheat flour instead of white, a little splash of lemon juice, and I divided all the ingredients in half and used 2 eggs. They were delicious!! Landon's had a layer of bananas baked in (spoon some batter on the griddle, top with thinly sliced bananas, then spoon another thin layer of batter on top of the bananas) and mine had chocolate chips! delicious all around!

You know, I've heard of people using sodas in baking all the time… I guess it's the carbonation that helps, more than anything else, but I'd personally want to stay away from the extra sugar/corn syrup/aspartame (depending on what you use). These are super-fluffy without any soda!

they look delicious! I will tell you a family secret we have been using for years in our house: a splash of 7up and lemon juice…. sounds a little weird, but my grandfather's uncle invented 7up so we use it in everything… and it makes them light and fluffy and incredible!!! And they are still amazing with chocolate chips!

wow! this recipe was simply delicious! i tried it for an evening and night time dessert today – turned out exactly as in the pictures! i added bananas to the mixture (plus choc chips), served it with ice cream and a lil plum sauce, and did it vanish fast!

I made these this morning and they’re the fluffiest pancakes I’ve ever made! I made some plain ones and some with chocolate chips. They were so yummy! Thanks for the great recipe
I suggest using the large chips and pushing them slightly down into the batter during cooking and smoothing over the tops. That way they hide in the center and they never burn! Corn (cooked kernels) is also a great addition!

one way to keep your chocolate chips (or anything else ie. blueberries!) from sinking to the bottom of your batter is to lightly dust them in flour first. works like a charm!

Evelyn, I think the last time I made them I tried to actually measure the real amount of milk I put into the batter…it was a bit over 2 cups I think. (Cup = measuring cup. I’m not sure what you mean by “how big the cup is”) Short answer? No. You just add milk until the batter is the right consistency.
Does it matter how big the cup of milk is?
Thank you for the lessons. I somehow made it to age 46 burning the pancakes every single time I made them. Yours turned out perfectly. My kids adore me (for today anyhow). Oh, and the semisweet/white swirled chips totally rock in these.

I like banana pancakes myself (and for a treat, I add the chocolate chips). I generally put in 1 overripe banana per 1-2 cups of dry ingredients. So delicious!
fun! i saw this on LJ and was inspired to make some chocolate chip pancakes too. (i added a little over 1/2 tsp vanilla and 1/4 tsp cinammon to the batter just to sweeten it a bit). delicious!
