I made these scones for a goodbye brunch for some of the girls in Meridian a while ago. They were flavorful without being too strong, soft without being too chewy, but also not crumbly. Very good!
Ingredients:
- 2 cups all-purpose flour
- 3 Tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 5 tablespoons cold butter
- 2/3 cup chopped dates
- 2 eggs, lightly beaten
- 1/3 cup milk
- cinnamon sugar (make your own blend… I like it pretty heavy on the cinnamon)
- Preheat your oven to 400 degrees Fahrenheit.
- Mix flour, sugar, baking powder and salt.
- Cut in butter until the mixture looks like small wet crumbs.
- Stir in dates.
- Combine eggs and milk; stir into crumb mixture just until blended.
- Turn onto a lightly floured surface. With lightly floured hands, gently knead dough until it’s smooth. Add more flour if it’s too sticky.
- Pat into a 9-in. x 6-in. rectangle. Using a floured knife, cut into six 3-in. squares; cut each square diagonally in half.
- Place on a greased baking sheet. Sprinkle cinnamon sugar over the tops of the scones. Bake for 12-14 minutes or until lightly browned.
- Remove from the cookie sheet and cool on a wire rack.

I love how you cut them up into triangles. I can’t be bothered using a cutter to cut them into circles, so I normally just dump the dough onto a tray, pat it out into a vague circle and cut it up into wedges. I call them Rustic Scones! I’m glad to see someone else who thinks outside the circle.
