Anywho, I don't think it was the carrots necessarily that made the cake bad, but the recipe I used was awful! Much too sweet, couldn't taste carrots at all, and even worse, the batter was so moist that the durn thing collapsed in the pan when I removed it from the oven. The whole she-bang went into the trash. I KNOW, right?? I mean, I wouldn't have made it if I thought it would be gross. Might've been better with regular sour cream that wouldn't "collapse" or maybe even a soy sauce vinaigrette dressing...
