Oatmeal Walnut Pancake Recipe
Here’s another variation on my basic pancake recipe. It’s a-muh-HAY-zing! My mother visited in February, and one morning for breakfast she requested IHOP. Well, when we googled around we realized we don’t HAVE an IHOP here. (Whyyyy?) So I asked her what she would have ordered and she told me oatmeal walnut pancakes sounded like heaven.
So I made some.
Ingredients:
- 2 cups flour
- 1 cup rolled oats (not instant oatmeal)
- 6 Tablespoons sugar
- 1/4 tsp. salt
- 2 Tablespoons baking powder
- Crushed walnuts, however many you like (I probably did 3/4 cup)
- 3 eggs
- 1 Tablespoon vanilla extract
- 1/3 cup canola oil
- 1+ cup milk (which ends up being around 2 cups or a bit more for me usually. It will depend on your preferences and on your climate)
Mix the dry ingredients. Mix the wet ingredients. Combine wet and dry ingredients. Add more milk if needed. Cook in a pan over medium heat (or on a griddle if you’re fancy like that). Enjoy!
We also made some bacon and cheesy scrambled eggs. The eggs look funny because the pan was too hot when I put them in. Usually I start scrambled eggs in a cold pan, but I was re-using the pan from the pancakes to have fewer things to wash (or for hubs to wash). They still tasted good though.
I ate my pancakes with a schmear of butter and a drizzle of honey on top. The guy and my mom (I think) both had maple syrup on theirs.
