Did you say Parfait?

Make this for a healthier-than-cherry-pie dessert, or eat it for breakfast. Come on, you know it’s better than those “whole wheat” lucky charms even if there is chocolate in it.

Layer:

  1. vanilla yogurt
  2. sliced strawberries
  3. mini chocolate chips
  4. vanilla yogurt
  5. sliced strawberries
  6. mini chocolate chips

Of course you can use whatever fruits you want, or nuts, or use plain yogurt and drizzle in some honey… this isn’t so much a recipe as an idea. Just in case you had forgotten all about parfaits and needed a reminder.

    You know what else is tasty in Parfaits? Granola! I have a super recipe (which I scammed from Idaho Rocky Mountain Ranch when I worked there), that’s easy to make:

    4 cups rolled oats
    1 cup sunflower seeds
    1/2 cup wheat germ
    1/2 cup oat or wheat bran (optional)
    1/2 cup canola oil
    1 cup honey

    Stir together oats, seeds, germ and bran. Add oil and honey. Mix well.

    Spray bottom of 9×13 pan with non-stick spray, put wax paper on top (the spray holds the paper in place). Put granola in pan. Bake at 350, stirring every time tops turn brown (about every 7-10 minutes) until medium brown all over (3-4 stirrings, maybe).

    Cool and add any or all of the following: raisins, craisins, sliced almonds, coconut.

    Store in an airtight container.
