Here’s another low-fat low-calorie snack, if you’re going that route.
Basically it’s just a box of cake mix (they have lower-sugar ones which will help your cause a little) mixed with a can of pumpkin puree.
These are the first ones I made. It’s devil’s food cake mix, and I mixed in the pumpkin by hand, which was VERY difficult. I recommend using a mixer. They turned out lumpy looking because the mixture was so thick but they tasted good and the texture is very moist, somewhat like a fudgey brownie.
After that, I used low-sugar white cake mix, my electric mixer, the pumpkin puree, and a bit of water to thin the batter some. I also added spices to these. Cinnamon, cloves, a bit of allspice… they still had the fudgey texture, but these were lighter due to the water.

One box of cake mix and a can of pumpkin puree will make a dozen muffins at about 130 calories each. If you add a bit more water to the mixture you can get about 14-15 muffins.

so…basically we follow the directions on the cake mix box, including the other ingredients (eggs and such?) And also, how much pumpkin puree should be used?

No, no eggs or oil or any of that… just the cake mix and pumpkin (and water if you want to thin it a bit). It’s a 15oz can of pumpkin.

Staci, you got it. The temp on the box… though these may take a little longer than the time recommended due to the dense/fudgey consistency.
Just wondering what temperature you bake these at? The same as the cake mix?
