So, this amazing girl started posting about her carrot chips and carrot fries… and how gooood they were. And you know what? I wanted some too.
So I thinly sliced some carrots.
And warmed a few tablespoons of coconut oil in a pan over medium-high heat.
And when the oil was hot, I threw in the carrots. And I let them cook for a while…
Until they were partly browned and cooked all the way through.
And after they cooled on a paper towel for a little while, I sprinkled them with a tiny pinch of sea salt…
And they were crispy, and oh-so-good.
Another day, I cut the carrots into little sticks and made them into “fries.” Those were really really good too. They reminded me of sweet potato fries.
Deanna uses tallow rather than coconut oil when she makes hers, and I’m sure that’s awesome too (but I don’t have any tallow).
Imagine making them and sprinkling on a little cinnamon as a sweet treat… or cumin and serving them as a side when you make curry.

I loved this recipe! I think next time I will cook them a bit longer so they get crispier. But still, so yummy!

carrot chips and carrot fries are wonderful! We made them years ago while working in a restaurant. We used the frie cutter and deep fried them – yum!!
Sweet potatoes are also outstanding. Try them if you haven't already.

I failed so hard at this recipe, mine went way more burnt and not crispy.
However even burnt it tasted decent so I’ll definitely give it another shot!

These look yummy!!! When we lived in Florida there was a wonderful vegan place that served carrot dogs that were so addictive..maybe I can try this in lieu of those!!!
