One of those Rainy Mississippi Days
Lately here in Meridian, we’ve been having muggy mornings followed by afternoon thunderstorms. As much as it would be nice to have less humidity in the air, I do love the thunderstorms.
Today, I decided to take advantage of the rainy weather by puttering around in the kitchen doing a few experiments and a bit of batch-snack-making. First, I tried to make some sort of pumpkin pancake thing. It was a huge fail and went in the trash. Then, I made some yummy baked ranch-cheese snacks — yummmmm. The recipe will definitely be appearing here in a little while.
After that, I made trail mix for the husband (who has been asking me to do that all week – oops) and some for me. His is mostly peanuts and raisins (with some more exciting stuff mixed in of course) since he eats bowlsful at a time. Since I snack on mine much more slowly, mine is more interesting (er, more expensive) with cashews, macadamia nuts, and stuff like that.
Then I made a gigantic pot ofpasta for my husband – topped with butter, garlic salt, Italian herbs, and parmesan cheese. Again, for his snacking pleasure. If we had an overhead camera recording a snapshot every 5 minutes, then put it together in a stop-action movie, my husband would look like a fly trapped in a box, bouncing off the walls and especially bouncing between the fridge and pantry, always looking for “something.” So it’s helpful for him if I make him a big bunch of “something” for him to eat when he gets snacky. It’s somewhat ridiculous.
Husband has been reading most of the day. Lately he’s been devouring books, since he hasn’t been flying. And Zora, our pup, is just fine with that. It means she gets lots of cuddle time.
I suppose it’s about time for me to put laundry away and tidy up in the living room. Gotta get spaghetti squash in the oven too.
