Healthy Cranberry Walnut Chicken Salad

This simple chicken salad is healthy and fresh, a unique combination of a slightly sweet dressing, tart dried cranberries, and pungent feta cheese. Add walnuts for a bit of texture interest, and put everything over shredded chicken breast meat… it’s perfect on its own, or in a pita, lettuce wrap, on crackers, in an endive leaf… the possibilities are endless.

why not cook your own cranberries with less sugar and have a healthier salad. the cranraisins are loaded with sugar and basically have no nutritional value.

I'm not a huge fan of the celery-y onion-y stuff either (though I do like a little celery in it occasionally, just not too overpowering. I hope you like this one! Let me know how it goes if you try it.

I must try this! I'm not a fan of chicken salad that's too mayo-y, or has celery or onions in it, which it often does. This looks like it would be just about right for me!
