Coconut Drink Recipe

When I was in China, one of my favorite beverages (other than lightly sweetened iced jasmine tea) was coconut milk. It came in a bottle, ready to drink, unlike canned coconut milk here which is extremely thick and nothing like the light drink I guzzled in TaiZhou. So for years, I’ve tried to find that drink… searching on Amazon.com, googling, and scouring the ethnic sections of grocery stores. Nothing.

So I started experimenting with the canned coconut milk, trying to dilute it into the right thickness. Nothing seemed to work.

Until… once I hit on the right thickness, I decided to try adding vanilla and sweetener. That was it!!! It tastes exactly like I remember!

Coconut Milk Drink Recipe

  • 1 can coconut milk
  • 2 cups water (or a little more than that)
  • 1 Tbsp vanilla and some truvia to taste
  • OR 1 Tbsp sugar-free vanilla syrup (like the kind you can get for coffee)

It’s so refreshing! Store in the fridge, and serve over ice.

Some separation might occur in the fridge, but that’s normal. Just stir it before you pour.

    In your recipe your used Truvia, would the taste be thrown off if regular sugar is used instead of Truvia?

    Hi, my Mom is from China and she makes a drink every once in a while, using a whole coconut. She would make something similar to what you are talking about…
    She would take out all the coconut meat, throw it all in a blender, add ice, (I asked her online and didnt give me a precise measurement) and sugar.
    She blended all three ingredients together, then she would strain the liquid out from that.
    She would chill that mixture until chilled, and then she would use that as a concentrate and add evaporated milk to it; she said to add to taste.
    I’m trying to make this next week, it is very very yummy.

    I know I wasn’t much help with the measurements but that is all the stuff you use, just experiement.

    I’m looking forward to trying to make my own coconut milk. I’m tired of accumulating all that waste with all the cans, and the BPA in each can is a concern.Surprised no milk bag/cheese cloth is needed here. Thanks! enjoying your blog

    I’ve been using my VitaMix to make coconut milk using just water and shredded coconut! I was so amazed that it came out so well blended. Even if you don’t have a Vitamix, i wonder if it would work at all in other blender or food processor??? I blend 2 c. water with 1 c. shredded coconut (unsweetened) for 3 min on high of vitamix. It does get quite warm, so i add some ice to the water. I add a few drops of stevia to sweeten. YUM!!!!

      I make cocoanut milk in my regular blender with 3 c cocoanut shreds and 6 c water…and it is SOOOOO delish.

    This sounds great! I don’t seem to like coconut miked into other drinks right now, but love coconut by itself! Maybe this will help… :)

    Try adding a teaspoon of instant coffee per 8oz. of liquid.

    It's like a latte, only awesome.
