I ate! Spinach Frittata Thing

Lately I haven’t been able to eat eggs without gagging, and most proteins make me lose any appetite I might have. So I really needed to sneak some in, but didn’t want to choke down a protein shake. So I thought maybe if I made something that was mostly NOT eggs, with eggs to hold it together (so I couldn’t taste/feel the eggs)… just maybe that would trick me into eating eggs!

And it worked. And it was delicious.

The Spinach Frittata Thing

Sorry for the crap phone pictures… I didn’t exactly “style” anything either. Just took a couple snaps of my SECOND piece after I realized the first piece was so good.

Preheat your oven to 400 degrees Fahrenheit

Ingredients:

  • Spinach – either fresh and cooked, or thawed frozen spinach, drained. About 1.5 cups. Not an exact science.
  • Half an onion, sliced and cooked in butter until it’s as “done” as you prefer. I like mine really wilty and cooked… about half were brown when I got tired of cooking them and took them off the heat.
  • A handful of pine nuts, lightly toasted and roughly chopped
  • 2ish cloves of roasted garlic – more if you want, less if you want. Make sure it’s mooshed up so it will mix in well with the other ingredients.
  • 2-3 eggs. I used 3. If you have slightly less spinach you might want 2. Just enough to hold everything together without being too eggy.

Coat a pie pan in oil or butter (or bacon grease!) and combine all ingredients well. Pat it with a spatula or the back of a spoon so it’s even and flat, then bake about 15 minutes or until the egg is set.

Sprinkle with salt, cut like a pie, and serve.

It was delicious. My husband tasted it (but he was making hot wings for himself tonight – lucky guy!) and said it was good. I tasted it…and then ate the entire thing. I was hoping to maybe have some leftover for breakfast, but on the other hand, by tomorrow I might be having a spinach aversion! Pregnancy is strange. So I took advantage of the tastiness and my fleeting appetite and just scarfed it down. AND for the first time in forever, I get to share a RECIPE with y’all! Maybe things will shape up this way more often in the near future. Cross your fingers!

    Good thing you didn't have a protein shake! I've been told you are not supposed to drink them while pregnant.

    Any idea why? That doesn't make sense to me...
    I mean, maybe you shouldn't drink protein shakes or "meal replacement" shakes while pregnant if your motive is to lose weight... but then just say "don't diet while pregnant." And it might be dangerous to drink shakes that include "multivitamin"-like profiles, due to the possibility of overdosing on vitamin A or somesuch...

    But if you every meat in the world AND eggs sound gross, and you don't eat a ton of cheese (and no legumes, soy, or soy products)... probably drinking a couple cups of whole milk, a splash of cream, and a couple scoops of whey protein isn't going to do ANY harm to mother or baby. Probably is a good and responsible thing to do to get some calories, proteins, fats... and much better than chowing down on bags of chips or hostess cupcakes because "I can keep them down" (which is the excuse a lot of pregnant women eating like crap tend to employ).
