We’ve been getting spinach in our CSA basket, but I’m not sure if my husband has actually gotten to eat any of it… I keep making creamed spinach for myself and gobbling it up for lunches. Can you blame me though?
It only takes a few minutes to make (depending on how cooked you like your onions) and only one pan, so it’s ideal for a quick mid-day meal or as a side dish. Here it is in my gorgeous new All-Clad pan. I’m in love:
First put a tablespoon or two of butter in your pan and let it melt, then add chopped onions (for my one bunch of spinach/one big serving, I used half of one onion) and let them cook until translucent or until they’re to your liking. You can also add minced garlic at this point. Sometimes I do; sometimes I don’t.
Add a bit of salt, white pepper, and if you’re feeling adventurous, nutmeg.
While the onions are cooking, you can wash, dry, and chop your spinach.
When the onions are cooked the way you like them, splash in a bit of cream and stir it all together.
Then throw in your spinach and toss/stir until it’s wilted but still bright green.
I love this stuff. I could probably eat it every day for a long time before I’d get tired of it. If I got tired of it.





















Yummy! This creamed spinach is delicious. I sauteed sliced mushrooms first, then added the rest of the ingredients. Plated the spinach in a bowl, then topped with pan seared scallops. This was a quick easy delicious restaurant quality meal, and low carb too.
My husband and I made this to go with our Easter lunch today (ham, sweet potato, and homemade applesauce). It was SOOO good, but I used too much cream (my husband said we just didn't have enough spinach!). I ended up thickening it up a tiny bit with a dash of Arrowroot, and my hubby used the leftover cream sauce with his ham.

not at all cloying the way it can be in restaurants. Thank you for the fantastic recipe! Next time I'll try it with lightly steamed Brussels sprouts and a little thyme.
I LOVE spinach. When I worked at a local restaurant I used to make spinach with garlic and oil EVERYDAY! Its just garlic and oil cooked together, add spinach, wilt and add S&P. Squeeze some lemon on top, and if you'd like toast some pine nuts to toss in. OMG yummmm! Ill have to try yours sometime, the only creamed spinach Ive had wasn't very good…yours looks much better.

Looks Yummy! I'll bet that mushrooms would be a nice addition. I know T likes them! Oh…hum let me think…Portabello (sp?) Mushrooms put in while the onions are cooking…just a thought.
