Spaghetti Squash Bacon Thing

This was one of those random “gotta make something for dinner and have no meat thawed” meals. Not really well thought-out, but it was decently tasty.

First I cooked some spaghetti squash (poked holes in it with a knife, and baked it at 350 for about an hour, then cut it in half and let it cool… scooped out the seeds and threw them away, then fork-scraped out the “noodles”). I spread the squash “noodles” into a baking pan and topped with pats of butter all over.

Then I sprinkled on lots of parmesan/romano cheese. You know, the stuff in the can? Why not, right?

Oh, and bacon. Lots of (cooked, cut-up) bacon.

And then I popped it in the oven to let the butter melt and the squash re-warm… and then topped with chopped tomatoes. And herbs. And salt.

It was pretty decent. The husband liked it more than I did I think. I was disappointed in the tomatoes. It’s still pretty early in the season, so they tasted like… nothing. Really, nothing. The tomatoes had no flavor. I think once they get some tomato-taste and once I can use fresh herbs from my garden, this might be worth trying again.

For now, it’s not an ERROR, but it’s a “pass” for me… ask me again in a few weeks though when the ingredients are fresher and tastier.

    So the commissary had decently priced spaghetti squash today, so I grabbed one and decided that sometime next week I am going to make a spaghetti squash dish… I may adopt one of the ones that you have made, or do a kind of Ratatouille with zucchini and squash and tomatoes and yummy goodness…. Oh and I also read an idea online to make hashbrown cakes out of spaghetti squash… sounds yummy, doesn't it!? I am so excited! Thanks for the inspiration!
