Good Chicken Salad Salad – With Grapes and Pine Nuts

Just another delicious summer salad made with local lettuce and tomatoes. But the star of the dish is, of course, the chicken salad on top. It’s so simple to make, and wonderfully flavorful.

Good Chicken Salad with Grapes and Pine Nuts Recipe

You will need:

  • several chicken breasts, poached and shredded (or leftover rotisserie chicken, roasted chicken, etc.)
  • mayonnaise
  • fresh squeezed orange juice
  • salt and pepper
  • red seedless grapes, halved
  • toasted pine nuts

It’s this simple:

  1. In a bowl, put a dollop of mayonnaise and whisk with orange juice until it makes a nice dressing.
  2. Add the chicken and fold until the chicken is all coated with the dressing.
  3. Add salt and pepper to taste.
  4. Throw in some red seedless grapes. Stir.
  5. Refrigerate until you need it.
  6. Top a green salad with the chicken salad.
  7. Sprinkle pine nuts on top.

    So jealous. I have a few green ones out there now. And I also have a small green pepper (so cute!) I did 2 raised bed gardens this year and so far I am loving them. They are about 20 inches high, so they help out with easy weeding and are less taxing on my back/knees.

    We are hoping to move into 5 raised bed gardens next year, around our fire pit and also add a small chicken coop in the back of the yard. If our yard was a little bigger we'd get bees, but with the 4 kiddos we feel its better to not have them for now. :)

    The whole dish looks really yummy, but man those tomatoes look AWESOME! Cant wait till we get tomatoes at our farmers markets up here in Cleveland. . . And then my garden will start producing. YUM!
