Grain-Free Gluten-Free Coconut Flour Pancake Recipe

Back in October, I shared Perfect Primal Waffles with you – and hopefully you’ve made and enjoyed them! We’ve actually eaten them tons of times, when we make a bigger/more complicated brunch on the weekends. But sometimes we want pancakes, and guess what! The batter works perfectly for pancakes too.

Grain-free Gluten-free Pancakes:

  • 6 eggs
  • 6 Tbsp milk
  • Splash vanilla extract
  • Optional – 2 Tbsp maple syrup, honey, Truvia, or other sweetener
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 6 Tbsp coconut flour
  • 1/4 cup melted coconut oil

Mix all of the ingredients together. I’ve found that adding the oil after everything else is combined works best to get the right texture. Let the batter stand about 5 minutes so the coconut flour can absorb everything the way it likes to. Then cook pancakes over medium-low heat. They take a little longer than regular flour pancakes do, but don’t be tempted to turn up the temperature – you’ll just end up burning them! Slow and low heat is better for coconut flour.

Hint: The pancakes will get little bubbles around the edges when it’s time to flip them.

They’re great with honey butter, maple syrup, jam, nut butter, warmed fruit, or just about any other topping you can imagine (Don’t tell, but once I made dark chocolate ganache to top them with. Yeah, I was having a wacky pregnant morning I guess.) so go wild! Let me know what you decide to top yours with!

Oh, and those potatoes up there? Perfect tallow-fried breakfast potatoes. You really should give them a shot too!

    These are the only pancakes I make at the moment. The only ones I could find that tasted half decent and they’re delicious!

    I’ve tried several coconut flour pancake recipes before, and these have the best texture – by far. Loved them.

    I just got some coconut flour and wanted to try making pancakes with it. I tried this recipe and ultimately made a few modifications. First, I blended everything except the flour and oil in the blender to make it smooth. Then I added the coconut flour and oil and waited 5 minutes. The batter was really thin so I added a little more flour. In the end, 9 tablespoons flour made the batter just right. I will definitely make these again.

    It would be great if you could put the number of servings on your recipes (even nutritional stats would be neat). But servings a good plus. I’m wondering the number of servings on your crackers and your gluten-free, grain-free pumpkin bread.

    Ever since you talked about using these as sammich bread, I’m jonesing to try them! As soon as the husband is paid, I’m getting some coconut flour. We’ve been talking about going gluten-free for a little bit to see if it helps us – I get headaches and he’s been feeling sluggish.

    I tried these pancakes last weekend and they were fantastic! My family said they liked them better than regular pancakes. Yay coconut!

    Yes, I'm sure… I make it all the time just as written. I'm wondering if

    maybe you're using a coarser or finer coconut flour, or if you live in an

    area with more humidity (humidity is almost 0 here in California's central

    valley)… and if those things might affect how your batter turns out. Sorry

    it's not working out for you!

    Is this recipe right? Sure doesn't seem to be. I followed it precisely and it came out as the most runny batter I've ever worked with. Far more runny than a crepe batter which caused it to run all over the place on my griddle. Not even a nonstick pan could make a decent pancake. I'm all about finding a great Paleo/Primal pancake recipe but have struck out thus far.
