I think I’ve mentioned that I’ve been freezing meals for post-baby… so last night I wanted to poach some chicken breasts and freeze some for easy meals (throwing into veggies/sauce, making into chicken taco salads, etc).
So I poached 6 breasts, and cut up 2 to use in dinner, which was sort of a repeat of this. Except with no rice. And I think I’m a better cook now so it probably tasted better too. Since the chicken was already cooked, I sautéed the onions and peppers first, then added chicken stock and cut-up carrots, simmered until the carrots were cooked and the stock was reduced. Sprinkled in paprika and garlic salt and stirred in the chicken and sour cream.
We ate it in bowls like a very chunky soup, and it was quite tasty! Sorry there’s no picture!
Plus I had 4 chicken breasts leftover to freeze for future meals.
And then I made some grain-free gluten-free cookies, because I was wanting cookies and milk and I figured this would be a lot more “wholesome” than buying something like Oreos. heh. They’re VERY tasty.
If you haven’t tried them yet, please do. They have a really nice cakey texture and even though they’re pretty low-sugar (only 3T of honey between 16 cookies, plus whatever sugar is in the dark chocolate you use) they definitely will satisfy a sweet-tooth attack.
