Zingy Cauliflower Salad

If you need to take something to a Labor Day picnic or barbecue, this is the perfect low-carb dish. It’s certainly crowd pleasing, and it’s a snap to make!

Zingy Cauliflower Salad

Ingredients:

  • cauliflower – “chunked” and steamed
  • mayonnaise
  • dijon mustard
  • celery – diced or sliced
  • salt and pepper

Whisk together the mayonnaise and the mustard. How much you use of each depends on how zingy you want your salad – more mustard = more zingy.

Throw the celery in the cauliflower, and add the dressing. Don’t put it all in at once, because you might make it too dressing-y, and you can’t take it out once it’s in! Toss to coat. Salt and pepper to taste.

Serve! It’s great with burgers of course, but would also be fantastic alongside some spicy dry-rub ribs! Or crispy chicken thighs…mmmm.

    I steam it in the microwave – put it in a bowl with a tiny bit of water in the bottom, cover with plastic wrap, and microwave about 6 minutes… when you can smell it, and it smells yummy, it's done. Be sure to drain the water afterward.

    How long did you steam the cauliflower? This would be the perfect thing for me to take to a family party on Sunday. :) Although, I will modify it half and half with plain Greek yogurt and olive oil mayo. Hmmm….may add some onion too!

    i guess it's potato salad-esque. That's where the inspiration comes from… but if you try to pretend it's potato salad you'd be disappointed… because it's cauliflower. But I love cauliflower so it's all good to me.
