My husband is pretty picky when it comes to cole slaw. He doesn’t like it when it’s too acidic, or when there’s “weird stuff” in it, and pretty much only likes the cole slaw from Kentucky Fried Chicken. But who knows what’s actually in their cole slaw? (I admit, I like it too… but fast food and chain restaurant food still freaks me out even though I eat it!)

This one is a homemade version you can whip up in a snap, and it’s just sweet enough for my husband, while still being a little tangy, which I appreciate. It goes PERFECTLY with crispy skin chicken thighs, and would be an ideal food to bring to a family reunion, barbeque, or potluck.

KFC-esque (But Better) Cole Slaw

Whisk together in a bowl:

  • 2-3 Tbsp mayonnaise
  • 3-4 Tbsp full-fat sour cream
  • a generous sprinkling of onion powder
  • 2 T rice vinegar
  • small squirt of dijon mustard
  • 1 packet (or a bit less) of Truvia
  • salt and pepper

Dump in a bag of pre-shredded cabbage-and-carrots. Mix thoroughly. Taste and adjust seasonings if you wish. Refrigerate at least 2-3 hours before serving.

That’s it. Easy peasy, and so good!
