So it’s fall now, but I found this photo from when my garden was exploding with tomatoes.
This was a very tasty salad!
So I figured I’d share, so that next summer you can make it.
Or if your tomatoes are still delicious and summery-fresh, you can make it now.Green Bean Tomato Bacon Salad
Steam some green beans.
Half some small tomatoes – grape, cherry, or pear (I used pear tomatoes).
Cook and crumble some bacon.
In a small bowl, whisk together olive oil, apple cider vinegar, a sprinkle of salt, and a touch of Truvia.
Toss everything but the bacon together, and refrigerate until chilled.
Add the bacon just before serving.
