Most fudge has scads and scads of sugar – usually multiple kinds: confectioner’s sugar, evaporated milk, milk chocolate, brown sugar, granulated sugar… most recipes have at least 2 types.
Here’s a refreshingly simple recipe for fudge that only has a bit of honey, instead of tons of sugar. I’ve adapted it from the recipe here.
Low-Sugar Chocolate Fudge
In your stand mixer, or with an electric hand mixer (whisk attachment), combine:
- 1/4 cup cocoa powder
- 2 Tablespoons honey, or however much you think you need.
- 2 tablespoons water
- 3 Tablespoons coconut cream concentrate
At first it might seem like it’s not going to come together, but just keep mixing on high speed until everything is combined. It’ll look like a rich chocolate dough.
Scoop the dough out onto a piece of waxed paper, fold the paper over the dough, and press to form a sort of patty. Refrigerate or freeze until firm, then cut into pieces to enjoy.
This recipe made 9 small (rich) pieces.
My husband and I both really enjoyed this fudge. It’s almost like eating a dark chocolate truffle. Mmm.

Wow we just made this with candy cane added. For a cup of cocoa (4 x batch), we used 4 T rapadura instead of any honey, & 7 mini candy canes which we blended altogether in the blender. We also topped the fudge with some more crushed mini candy canes. I think we will be giving this out for Christmas!
So far I have tried several of the recipes they a re to die for. I have tried the new York peppermint patties, granola bars. They are great.

Did you use less water because you substituted coconut milk? I may try it this way.
YUM! My daughter and I just sampled this right after I mixed it together. YUMMY! We both enjoyed it. I could see somehow making this into a fudge frosting! I added a few drops of vanilla creme stevia and thought it balanced the flavor better. THANK you for a wonderful recipe!

This fudge is very tasty because it is not too sweet. I remember my grandmother sometimes made similar candies, and we, children, liked them very much.
