Today, I made these grain-free granola bars, but when I was making the honey-coconut oil mixture, I dumped in a couple tablespoons of cocoa powder. Oh, YUM!
And for dinner, I made crispy skin chicken thighs, but I put them on top of some carrots while they were in the oven. The carrots got all soft and chickeny and it was really good.
I don’t always make a weekly meal plan, but this week I did. Who knows if I’ll stick to it or not. Hope so!
Tomorrow: Change of Command party – probably bringing one of these? Not cooking dinner.
Thursday: Vampire Chicken (Have you heard of this? Crockpot chicken with 40 cloves of garlic, and parsley, sage, rosemary, and thyme. I’ll write it up probably. As long as I remember to take pictures.) with green beans.
Friday: Husband will be at the hornet ball. I won’t be, because the hotel was booked already. But I’ll probably have leftover chicken for dinner.
Saturday: Use some leftover chicken to make coconut lime chicken soup (but with homemade chicken stock instead of the water).
Sunday: Country Fried Steak (with coconut flour, not wheat flour) with roasted broccoli.
Monday: Butternut Squash Soup – winging it, and if it’s good I’ll share the “recipe” with you.

Last night I made a wonderful new primal dish – slow cooked beef with pumpkin and ginger. The sweet and spicy-ness of it was just heaven! The deal maker is the heavily reduced beef stock (homemade) which lends its sticky rich goodness to so many of my dishes.
I do all my shopping for week at a time. And before I head to the store I plan out all our meals for the week. Then I make my list according to departments. It helps eliminate buying any extras. When I get home I make a list of the different dinner options on my fridge so who ever is making dinner that night can pick from what there is, without having to think about it. It works out great and saves lots of money and time and food waste!
We implemented monthly menu planning this year and I can’t tell you how much it has helped! Not only have I saved a bunch of money on my grocery bill but we are eating healthier b/c I’m not trying to figure out what to make when I’m tired from having worked all day.
I looked up the recipe for Vampire Chicken…looks yummy! We will probably be having that for dinner today! Thanks for the idea!
Ohh! I need to start a weekly meal plan. Planning meals can be so stressful. I just made som butternut squash soup the other day. I started with butter and onion, threw in some chicken stock, cut up butternut squash, acorn squash, white potatoes and sweet potatoes. Cooked for a while, mashed (didn’t puree) and left some texture. Added milk, nutmeg, and cinnamon. YUM!
