Usually I can’t call my recipes Paleo because I use so much dairy, but these have zero dairy, and of course they’re grain-free, gluten-free, and delicious.
Anneliese and I both THOROUGHLY enjoyed them. And at first she thought they were cookies, and kept signing “more cookie.” No, dear, these are waffles. So then she would ask “full peese!?” (full=waffle)

I really must find her hair brush… she looks like a bit of a rag-a-muffin. Oops!
Nothing to do with the recipe, but I used to pour batter on the whole waffle maker to make a giant square waffle. Now I like to do a little blob in each mini square to make smaller ones. I’m not sure why I hadn’t thought of that before, because I always cut them apart before anyway.
Also? Whenever I would get pecan waffles at Waffle House (I don’t know how long it’s been…ages) I noticed that they sprinkled the nuts on top before closing the waffle iron, rather than mixing them into the batter. I like that, and it gives me the option of having some with nuts and others without. In case I wanted some nutless ones… sometimes you feel like a nut; sometimes you don’t. You know.

This recipe made 12 little squares, though I have to admit the last 2 or so were pretty dinky. So say 10-12 to be safe. In any case, it feeds 3 people just fine.

… even if one of those 3 people is a VERY hungry toddler.

Paleo Banana-Pecan Waffle Recipe
Ingredients:
- 1 1/2 cups almond flour
- 5 eggs (mine were on the small side, so 4 large ones may be fine)
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 ripe bananas, mashed (the more ripe they are, the sweeter the waffles will be)
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- Coconut oil
- Chopped pecans
Method:
- Plug in/preheat your waffle iron.
- While that heats up, mix everything else together, except for the coconut oil and pecans.
- Once the waffle iron is warm, drop a little bit of coconut oil in each square (I did about 1/2 teaspoon). My waffle iron is non-stick but for some reason, these wanted to stick. The coconut oil fixed that issue though.
- Drop a blob of batter into the center of each waffle-spot.
- Optional – sprinkle some or all of them with chopped pecans.
- Close the waffle iron and wait for yourself to psychically know the waffles are done. Or some waffle makers have a light that will help you… or you can pay attention to how much steam is coming out, and what it smells like. If it smells like waffles and there’s not a lot of steam, you’re probably good.
- Take the waffles out and eat them. I was going to put butter on mine, or some organic fruit spread (omg yum), or homemade whipped cream (no sugar necessary)… but they were so good I ended up just eating them plain. I’ll probably fancy them up a bit more when my husband comes home and I make them for him!

This is by far my most favorite wheat free recipe ever! I made almond milk this morning and used the almond meal in place of the almond flour and i purred the heck out of my banana’s. i skip the nuts because I’m feeding 1 year old dont want her to choke on them. but otherwise my whole family LOVES these! thank you
I was looking for a delicious and easy paleo banana waffle and this came up. I made these for breakfast with friends today and it was absolutely perfect!!
I followed the recipe exactly. I topped them with fresh strawberries, fresh blueberries cooked down into a syrup, chopped pecans and agave nectar. No butter needed, YUM!!

Made these today, my kids loved them! I omitted the pecans, but otherwise made them exact. My 6 year old had them with pure maple syrup and my oldest had them with a pineapple coconut cream (canned coconut milk fat whipped and fresh minced pineapple stirred in) and they both ate 3!!

This recipe makes me sad! I got rid of my waffle iron when we fully dedicated ourselves to paleo/primal eating. I’ve always wanted a Belgian waffle maker; maybe this is the excuse!
