Egg Salad (Sandwich)

I love eggs! I like them scrambled, fried, hard-boiled, in egg salad, egg salad sandwiches, green… I like them, Sam I am!

So in honor of the egg salad sandwich, I give you a simple photo how-to. Yum!

Step 1: Smash some hard-boiled eggs with the back of your fork. Some people like to cut them, but I like to use a fork because it makes some nice variations in chunk size.

Step 2: Add some wet ingredients. I used mayonnaise, mustard, and relish this time. Sometimes I like to do mayonnaise and some ranch dressing, other times, mayonnaise and lemon juice. It’s up to you and your palette.

Step 3: Mix, then add seasonings. This time I just used salt and pepper, but you can use anything that strikes your fancy. Just make sure the seasonings match your wet ingredients in taste. I don’t think chili powder would be a very good match for ranch dressing, but maybe that’s just me.

Step 4: Serve, and eat. Egg salad is great on those tiny pieces of bread (so cute), on top of a green salad, in a pita, or on a sandwich. Any way you do it, enjoy the summery treat!

    Mmm, I love egg salad. I make mine with Spanish olives. I see that you’re smashing up your eggs with a fork. I know how much of a pain that can be. I went searching for something better to dice up my hard boiled eggs and honest to goodness the very best thing to use is a biscuit cutter with a handle. Just pop your boiled eggs into a bowl, start chopping at them with a biscuit cutter and you’ll have egg salad in no time (and you wont have to chase slippery eggs around the bowl with a fork that ends up bent!)

    Mmm yeah… I love it with green olives too, when I make the lemon juice version.
    The biscuit cutter is a really good idea, though I’ve never had trouble with the fork at all. :)
    I need to get some biscuit cutters though… I always just use a glass!

    Also, an old fashioned potato masher works great also. I love egg salad too, I hardly make it the same way twice, there’s too many spices to try out.

    My mom always used a potato masher, but the old metal kind.. the newer plastic ones don’t seem to do as good of a job.

    Dawn, maybe I need to get a metal one… I hate my plastic one. The only problem is you can’t use the metal in a non-stick pot (like when you’re actually making potatoes. hmm…
