Chicken Taco Nachos
We were avoiding grocery shopping, but we needed to eat. So we pulled out several items we already had and I concocted this “pantry-buster” of a meal. It was so good it might become a menu item in the future.
First, I browned some chicken. We had bought two bags of frozen boneless skinless chicken breasts on sale (buy one get one free), so that’s a sort of “pantry item” we’ll have for a long time now.

Meanwhile, I baked some corn tortillas I had, leftover from making homemade tortilla chips. Just stick them in the oven till they’re crispy.

While they were crisping and the chicken was browning in the pan, I chopped up some tomatoes, leftover from the tomato pie.

When the chicken is done, throw in some taco seasonings (according to the directions) and let it simmer for a bit.

Now we can begin assembly.
1) Tortillas + tomatoes

2) Tortillas + tomatoes + chicken

3) Tortillas + tomatoes + chicken + cheese

Broil the whole thing to melt the cheese.

I served these delightful “taco nachos” with a dollop of sour cream, which we had around because of the green bean casserole and the paprika chicken and rice.

My husband just walked by, saw the pictures and said, “Oh, that was good!”
This pantry-buster gets thumbs-up ratings. Yum!
