Chicken Quesadillas
Since we’re currently “camping out” in a hotel suite, cooking must be kept SIMPLE. We don’t have all of our usual ingredients, utensils, pots, and pans…
So chicken quesadillas were a good option for lunches! I cooked 4 boneless, skinless chicken breasts in a pan, sprinkled with a little taco seasoning.

Then I cut the chicken into pieces while I simmered some water with the rest of the taco seasoning packet… to make a sauce.

Then, I tossed the chicken in the sauce and put it in a resealable container… it was enough chicken for several days of quesadillas for us both. Just a tortilla with some melted cheese and taco chicken… mmm.

That’s good lunch.
