			<content:encoded><![CDATA[<p>If you’re wondering “At what age can I give my baby cookies?” the answer is “It depends on what kind of cookies.” Truly, I hope you’re not wanting to give your baby Oreos or Chips Ahoy cookies. If your baby is ready for food (sitting independently, sturdily, and can bring food to her mouth on her own) and has tasted lots of real foods (vegetables, meat, fruits, etc.), I don’t think it can hurt to give the baby a little baked good as long as you approve all of the ingredients.</p>
<p><a href="http://www.amazon.com/exec/obidos/ASIN/0060245867/joyfabod-20/">And if you give a baby a cookie</a>, she’ll want a glass of milk to go with it…</p>
<p>I mixed up some <a href="http://www.joyfulabode.com/2009/10/11/coconut-drink-recipe/">Coconut milk drink</a> and saved a bit of it, unsweetened, for Anneliese. She GULPED it. LOVED it.</p>

<p>I also made these <a href="http://www.joyfulabode.com/2010/07/21/grain-free-gluten-free-cookies-of-awesomeness/">awesome grain-free chocolate chip cookies</a>, and made sure to make a small one with no chocolate chips, for Anneliese to try. They’ve got loads of good stuff in them and are high protein and easy to hold, bite, and chew, so I thought it would be a nice treat without being crazy or full of too many refined ingredients and sugar.</p>

<p>She really liked the cookie too. In fact, she recognized what a great pairing it was, because as soon as she took her first bite, she started signing “milk.” I guess it’s a classic combination for a reason.</p>
<p>So, again, if you’re asking, “At what age can I give my baby a cookie?” I think the answer is, “When you make a baby-friendly cookie to share.”</p>

<p>We’re finally getting ready to paint her room the color we’ve had in mind since before she was born. I just hope it turns out the way I have envisioned it. I didn’t do a patch test with the paint, so I’m not positive, but I did have the paint chip up on the wall for a long time.</p>

<p>I’m also going to make some mashed cauliflower for us. Too much food for 3 people? Maybe so, BUT I’m loving having my husband home again, and having an excuse to actually COOK-cook. Making roast beef for 2 adults is only half as crazy as making it for just one. That’s my story and I’m sticking to it.</p>
<p>(Also, husband home apparently = more blog posts. Go figure!)</p>

			<content:encoded><![CDATA[<p>Tonight’s dinner was fantastically fresh. BLT Summer rolls, blanched veggies, and a ranch sauce for dipping.</p>

<p>When I read <a href="http://www.blogher.com/bacon-lettuce-tomato-blt-spring-roll-i-broke-rules-sorry-mom">this BlogHer post</a>, I became obsessed with finding rice paper. Easier said than done… but finally I found a “hole in the wall” Asian grocery store, and they had them. So I happily carted them home, and filled them with chopped lettuce, cooked bacon, and thin slices of local heirloom tomatoes ($4 a pound but so worth it, and hardly any seeds/slime… just juicy flavorful goodness).</p>
<p>The vegetables are asparagus and some local wax beans I picked up at the farmer’s market in Hanford. To blanch, just bring water to boiling, throw in veggies (just a bit at a time or your water temp will drop too much), cook for a couple minutes until the color is bright, then plunge into ice water to stop the cooking. They’re not raw, but crunchy and crisp, and retain their freshness (seriously, if you wanted to freeze green veggies, this is how to do it so they don’t get nasty in the freezer – blanch first, then freeze).</p>
<p>We dipped everything into the homemade Ranch sauce, and thoroughly enjoyed ourselves on this summer evening.</p>

<p>It’s funny, if you look at the USDA food pyramid… if you tried to eat as many servings of everything they want you to, it would be really really hard. (Well, at least the pyramid I grew up with. Not sure about the “my pyramid” or whatever the new one is.) NO ONE struggles to eat more bread, pasta, or rice though. And you know I don’t eat that stuff at all when I can help it. For me, Meats/eggs and veggies are at the top of the priority list, and fruit comes next. It’s natural for me now, but a lot of times people ask me how they can squeeze more produce into their diet, especially when they didn’t grow up eating much fresh stuff.</p>
<p>So here are some ideas.</p>
<ol>
<li>
<h3>Start with Breakfast.</h3>
<p>I’m not a huge breakfast person, just because I’m not usually hungry when I wake up, but when I do eat breakfast, I make it count. I try to eat a really protein-rich breakfast, whether it’s bacon and eggs, or <a href="http://www.joyfulabode.com/2009/09/20/pork-breakfast-sausage-spicy-version/">breakfast sausage</a> and (high protein) <a href="http://www.joyfulabode.com/2009/10/02/perfect-primal-grain-free-gluten-free-waffles/">grain-free waffles</a>. But it’s really easy to add vegetables by making an omelet or frittata. Just add onions, peppers, mushrooms, or whatever else you like! And waffles or pancakes are great with some fruit on top. Just heat berries with a little vanilla extract and a touch of honey for a great topping that’s healthier than syrup.<br />
Redefine Lunch.</li>
<li>When I was a kid, I remember bringing lots of raw veggies in my lunch box, as opposed to a sandwich. I would have celery filled with cheese or peanut butter, carrots with a dip, raw green beans, broccoli, or whatever else caught my eye in the produce section of the grocery store. No one said lunch has to be a sandwich, wrap, or bowl of soup! But if you like your sandwiches or wraps, add flavor and nutrition by piling on baby spinach, tomato slices, <a href="http://www.joyfulabode.com/2010/01/19/how-to-roast-red-peppers-and-12-ways-to-use-them/">roasted red peppers</a>, olives, or anything else that sounds good. It’s also easy to veg-up soups. Another produce-rich lunch option is OF COURSE the “big-ass salad” (coined by <a href="www.marksdailyapple.com" class="broken_link">Mark Sisson</a>). Fill a bowl with dark greens and top with anything! Strawberries and bacon, artichoke hearts and sun-dried tomatoes, olives and pepperoncinis, snow peas and water chestnuts, and don’t forget to add chicken, fish, ham, eggs, or another protein.<a href="http://www.joyfulabode.com/2009/07/25/belt-salad-blt-with-egg-with-roasted-asparagus/"><img style="background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border-width: 0px;" title="image" src="http://www.joyfulabode.com/wp-content/uploads/2011/04/image3.png" border="0" alt="image" width="520" height="520" /></a></li>

<h3>Snack Attack.</h3>
<p>Vegetables and fruits make fantastic snacks. Recently, I’ve been snacking on carrot sticks with <a href="http://www.joyfulabode.com/2008/04/03/perfect-party-dips-yummus-hummus/">hummus</a> (yeah, I’ve gotten lax on the no-legumes thing). Another of my (weird) favorites is just a big bowl of beets. Either cold, or hot with butter and salt. I also like to blanch fresh green beans, snow peas, or sugar snap peas, and eat them with homemade ranch dip (sour cream with seasonings). Apples are great with a <a href="http://www.joyfulabode.com/2009/10/19/primal-party-foods-part-3-of-5/">yogurt-almond-butter dip</a>. All of these real food choices are better than those “100 calorie packs” and other convenience snacks that are available.<br />

<h3>Dish up Dinner.</h3>
<p>Stop kidding yourself. Roasted potatoes are awesome, but they’re not packing much of a nutritional punch. And macaroni and cheese might be called a vegetable in southern diners, but, well… can you show me the plant it grows on? Make an effort to serve salad with your dinners, and to include <a href="http://www.joyfulabode.com/category/recipes/sides/vegetables-recipes/">one actual vegetable</a> in your meal. Try something you’ve never had before. Or try an old favorite a different way. Pick up something you don’t recognize from the farmer’s market.<br />

<h3>Drinks and Desserts.</h3>
<p>Smoothies (and even “Green smoothies” with spinach or kale), juice (veggies and fruit – I know people with juicers that basically throw the whole produce section in there), and <a href="http://www.joyfulabode.com/2010/06/02/healthy-low-carb-dessert-blueberries-with-cinnamon-cream/">healthy desserts</a>. These are all a good way to get in some extra minerals and vitamins from produce!<br />

<p>Do keep in mind that without dietary fat, the minerals and vitamins in fruits and veggies remain “locked away” and are inaccessible to your body. So be sure to cook your omelet in bacon grease, add butter to your veggie soups, douse your salads with olive oil, eat your berries with cream, and roast your broccoli in coconut oil. Fat isn’t fattening. And you need it.</p>

			<content:encoded><![CDATA[<p>Today, I made these <a href="http://www.joyfulabode.com/2010/09/12/grain-free-granola-bars/">grain-free granola bars</a>, but when I was making the honey-coconut oil mixture, I dumped in a couple tablespoons of cocoa powder. Oh, YUM!</p>

<p>And for dinner, I made <a href="http://www.joyfulabode.com/2010/02/23/crispy-skin-chicken-thighs-and-roasted-cauliflower/">crispy skin chicken thighs</a>, but I put them on top of some carrots while they were in the oven. The carrots got all soft and chickeny and it was really good.</p>
<p>I don’t always make a weekly meal plan, but this week I did. Who knows if I’ll stick to it or not. Hope so!</p>
<blockquote><p><strong>Tomorrow:</strong> Change of Command party – probably bringing <a href="http://www.joyfulabode.com/category/recipes/partyfoodsandsnacks/">one of these</a>? Not cooking dinner.</p>
<p><strong>Thursday:</strong> Vampire Chicken (Have you heard of this? Crockpot chicken with 40 cloves of garlic, and parsley, sage, rosemary, and thyme. I’ll write it up probably. As long as I remember to take pictures.) with green beans.</p>
<p><strong>Friday:</strong> Husband will be at the hornet ball. I won’t be, because the hotel was booked already. But I’ll probably have leftover chicken for dinner.</p>
<p><strong>Saturday:</strong> Use some leftover chicken to make <a href="http://www.joyfulabode.com/2009/09/14/coconut-lime-chicken-soup/">coconut lime chicken soup</a> (but with homemade chicken stock instead of the water).</p>
<p><strong>Sunday:</strong> <a href="http://www.joyfulabode.com/2007/09/26/country-fried-steak-with-gravy-for-the-gravy-phobic/">Country Fried Steak</a> (with coconut flour, not wheat flour) with <a href="http://www.joyfulabode.com/2010/01/18/roasted-broccoli/">roasted broccoli</a>.</p>
<p><strong>Monday:</strong> Butternut Squash Soup – winging it, and if it’s good I’ll share the “recipe” with you.</p></blockquote>

<p>Coconut cream concentrate is basically ground up coconuts, oil and all. Think of peanut butter, but instead of peanuts, it’s coconuts. In the name of all that is holy, this is amazing stuff.</p>
<p>It’s mostly fat (1 tablespoon contains almost 100 calories of fat) which means a spoonful can be an excellent quick pick-me-up for those primal/paleo/real-food-minded folks.</p>
<p>Some people use it as a spread (like you would with peanut butter) on toast or whatnot, and according to the Tropical Traditions site, it can also be used as a non-dairy creamer in coffee.</p>

<p>You can stir it into water to make coconut milk or coconut cream (depending on how much you use) to use as a beverage or in cooking, too.</p>
<p>It’s 100% organic coconut – no weird ingredients.</p>
<h2>My Thoughts:</h2>
<p>First of all, it took me a while to try this out, because there’s one inconvenient step you have to complete before you can use the coconut cream concentrate.</p>

<p>You have to actually “prepare” it … the oil separates out of the coconut cream, just like the oil in natural peanut butter separates out. But coconut oil is often solid at room temperature, so it can be pretty hard to mix back into the coconut meat. I did the hot water thing but still got really frustrated in the mixing process… the jar doesn’t have much extra room, so I was really worried I’d splash the oil out accidentally.</p>
<p>My husband actually ended up doing the “prep” part – he’s a pro at mixing peanut butter to start a new jar, and he did this easily too. Maybe I’m just clumsy.</p>
<p>Once it was mixed together, I was a little disappointed that it seemed so runny. Of course, I wasn’t thinking about the oil still being melted at that point. I went ahead and tried it in a recipe:</p>

<p>Coconut cream “health fudge.” I was again a bit disappointed because the fudge wasn’t very fudgy, and it also mostly tasted like peanut butter. I wanted more coconut cream concentrate flavor!</p>
<p>Well, imagine my delight when today I went to inspect the coconut cream concentrate and taste it again, and it had thickened into this delightful texture:</p>

<p>Because the oil had hardened again, but this time was mixed throughout, the concentrate was more like the texture I had initially expected – more like peanut butter. Exciting!</p>
<p>I ate a spoon full. It was awesome. Like the delicious exciting flavor of coconut oil, but without making your lips and throat feel all greasy (yes, I’ve eaten a spoon of coconut oil on its own before).</p>
<p>I’m really looking forward to using it to make my <a href="http://www.joyfulabode.com/2010/06/10/homemade-york-peppermint-patty-recipe/">homemade peppermint patty recipe</a>, without having to grind up the dried coconut… this will be much simpler and probably a smoother texture! I’m also thinking of homemade almond joys, and maybe trying it in a cookie recipe in place of butter. In the meantime though, I think I’ll have another spoon full as a snack.</p>
<p>It’s delicious! And now that I know just how delicious it is, I won’t wait as long to “prep” my next jar.</p>

<p>There’s nothing but coconut in this bucket, my friends. And ain’t life grand?</p>
<h2>My Thoughts:</h2>
<p>First of all, let me say I’m a HUGE fan of coconut.</p>
<p>I’m a HUGE fan of coconut. There, I said it.</p>
<p>Coconut flour, coconut milk, coconut flakes, coconut oil… You name it. If you’re a primal/paleo/WAPF/”real food” reader (which most of you are), by now you’ve embraced the idea that modern humans eat way too much processed food, way too many carbs, far too many grains, and not nearly enough fat. Fat’s the good stuff. Stable, saturated fat. When you don’t have a ton of insulin floating around in your blood from eating cereal with skim milk, half a bagel, and orange juice (holy sugar overload!), your body LOVES to use fat as fuel.</p>
<p>So check it out. Nutrition facts for oats on the left. Coconut on the right. Also consider dried coconut is lighter than oats are, so 1 oz is “bigger” when we’re talking coconut.</p>

<p>Those little charts at the bottom? I’ll take the fat-filled one please!</p>
<p>Tropical Traditions specializes in coconut products, and they know what they’re doing. Plus, they give it to you in a HUGE stinkin’ bucket, for a reasonable price. Before I found Tropical traditions, I had bought little bags of dried coconut … probably about 8oz in a bag, for $6-7. Special-ordered and delivered to my local gourmet shop. Because of course, the grocery stores are only interested in carrying sugar-infused sticky coconut.</p>
<p>Conversely, Tropical Traditions makes it easy for coconut to become part of your regular diet. This GINORMOUS tub of shreds only costs $17 (and they often have sales or deals where you can get other products free, if you’re subscribed to their email list). I could only get 2 or 3 little baggies of it from the gourmet shop for that price. So you can stop treating it like a “special treat” or an exotic ingredient (am I the only one who does that with expensive foods?), and start USING it.</p>
<p>And why did I compare it to oats? Well, the first thing I did when I got the coconut in the mail was use it to replace the oats in my <a href="http://www.joyfulabode.com/2010/09/12/grain-free-granola-bars/">homemade granola bars</a>. And it did beautifully. So much so that the granola bars are almost gone. And I have to make some more tomorrow because my husband and I both love them, and my mother is coming into town and also requested them.</p>

Again, like oats would have, it added another texture profile to the cookies. Perfect. It’s also delicious added to <a href="http://www.joyfulabode.com/2009/10/21/primal-party-foods-4-of-5/">fruit salads</a>.</p>
