I’ve never been a make-soup-from-scratch kind of girl… but I have no idea why not. I loved the idea of homemade soup, and enjoyed it when other people made it, but was somehow scared of making anything more complicated than plain old chicken soup.

But this recipe is simple to make, delicious, and un-terrifying.  If you’ve never made soup before, this might be a good place to start.

The spices you’ll need are:

  • 1/4 tsp chili powder
  • 1/4 tsp cayenne
  • 1/2 tsp curry blend
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

You’ll also need about 4 cups of cooked chicken, cut into chunks or shredded.

Into your soup pot, pour a 14oz can of coconut milk and 2 cups of water (or chicken stock. it’s awesome with chicken stock. but fine w/water if you don’t have any on hand).

Add your chicken…

… and about 1/4 cup of lime juice.

Slice 3-4 carrots and add them to the soup pot, too.

1 Tbsp of soy sauce,

and 1 Tbsp oyster sauce give this an authentic taste. Don’t fear the oyster sauce… I know it sounds gross and smells pretty bad, but it has to be in the soup or it won’t taste right.

I also added a tablespoon of lemon juice, which is optional.

Sprinkle in just a bit of sea salt. And dump in your spices.

And stir it all together. Bring it to a boil, then reduce heat, cover, and simmer 8-10 minutes or until the carrots are cooked and everything is nice and warm.

I thought it would be a neat idea to toast some coconut and sesame seeds to top the soup, but this isn’t really necessary.

Garnish with parsley and serve. Yum!

Bring to boil, reduce heat. Cover, simmer 8-10 minutes. Garnish with parsley

  2. I love this recipe. It’s a great way to introduce people to Thai flavors. In a pinch, I have substituted rice for the clear noodles and cilantro from a squeeze tube for fresh cilantro. Bottled lime juice isn’t the same as fresh limes, so avoid that. I am making this right now with leftover chicken. I use homegrown jalapenos that I freeze whole in a baggie, and the amount of heat provided by using the recommended amount is perfectly suited for my tastes. . I always make a double batch, too.

    Totally making this when my mom visits next week! But subbing wheat free tamari for the soy sauce so it’ll be gluten free. LOVE coconut milk based soups and sauces!

    You’re so good at all of this you should take a stab at some Indian dishes. I’d love to see your take on vindaloo or tikka masala. 🙂

  7. We liked this a lot! I used scallions to garnish since they were lurking in the fridge. I subbed Nam Pla fish sauce for the oyster sauce, as that is what I had on hand.

    oh, geez! I forgot to put that in, didn't I? Pretty sure it was before the soy sauce… but since it's basically a “stir it together and heat it up” recipe, I'm not sure it matters when you add them.

    Yum! Sounds delicious. Yeah, I love making homemade soup, and it's not as hard as it sounds. Apart from the occasional pureeing of stuff, which just means you have to wash a blender…
