Meatless Monday is a great way to start eating and feeling better, but it’s also a fantastic way to save a little money in your grocery budget.

I don’t know about you guys, but meat accounts for more than half of my family’s grocery budget. Of course I try to shop the sales when I can, but for the most part meat is expensive. Swapping one day a week for a meatless, vegetarian dish is really simple if you plan ahead and create a weekly or monthly menu.

My husband was a little bit on the fence about this one, let me tell you! He is a meat-and-potatoes kind-of-guy, so the word *vegetarian* left him feeling uneasy. But I’m here to tell you that meatless doesn’t mean you have to sacrifice flavor, and there are some really amazing meat substitutes out there as well.
