Jalapeño Corn Bacon Salsa Recipe - Party Appetizer


  • 5 Bacon strips
  • 1 onion diced
  • 1 Cup corn kernels organic / GMO-free if you can get it
  • 2 Jalapeños sliced
  • 2 Tbsps chopped parsley leaves
  • ¼ Cup sliced green onions
  • Drizzle olive oil
  • 2 Cups water
  • 2 Tbsps butter
  • 1 Tbsp lemon juice
  • Organic corn chips for serving


  1. Drizzle olive oil in a skillet preheated to medium heat.
  2. Cook the bacon.
  3. Blot the bacon on paper towels, then thinly slice.
  4. Add the water to a pot and bring to a boil. Add the corn and reduce to a simmer. Cook for 7 minutes.
  5. Drain the water and discard.
  6. Mix the corn with butter and stir until well mixed.
  7. Transfer to a bowl, add the bacon, onion, jalapeños, parsley, lemon juice, and green onions.
  8. Mix well before serving.
  9. Serve with corn chips and enjoy.

Recipe Notes

Add some of your favorite hot sauce to make it even spicier.
