20 Minute Sweet Potato Soup

  • 2 tbsp butter
  • one whole onion chopped
  • 3-4 cloves of garlic chopped
  • 6 carrots peeled and diced
  • 3-4 large red sweet potatoes peeled and diced
  • 1 quart chicken broth
  • 1/2 tsp thyme
  • 1/2 tsp ground sage
  • salt and pepper to taste


  1. Put butter, chopped onion, chopped garlic, and diced carrots into instant pot on sauté. Cook until onions become translucent.
  2. Add diced sweet potatoes, chicken broth, and seasonings.
  3. Secure lid on top and set to "Manual" high pressure for 20 minutes.
  4. When the 20 minutes are up quick release to open the lid and blend soup. I use my immersion blender and it makes the smoothest soup.
  5. Serve. Easiest soup ever.
