Bacon-Wrapped Jalapeño Popper Chicken

These are an awesome dinner for any group. The cream cheese tones down the jalapeños enough that even my 2 year old and 4 year old gobble them up. The sweetness of the brown sugar is perfectly balanced by the saltiness of the bacon. Basically, these are perfect.

  • Chicken breasts cleaned and cut into strips
  • Brown sugar
  • Cream cheese (real full-fat please)
  • in Jalapeños de-seeded and cut half
  • in Bacon strips cut half


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Roll each piece of chicken in the brown sugar to lightly coat it.
  3. Place a lump or a slice of cream cheese on top of each piece of chicken, and squish it on using a jalapeño half.
  4. Wrap the bacon around the whole chicken jalapeño "sandwich" at a slight angle.
  5. Place each chicken bundle onto a baking sheet.
  6. Cook for 30 minutes or so, until the chicken is cooked through and the bacon is starting to crisp.

Recipe Notes

Try making nugget-size bundles secured with toothpicks as a party appetizer.
Also? The leftovers are fantastic cold, right out of the fridge. No joke.
